Hilton Master Class Tastes the Best of Barramundi

The Courier Mail Hilton Master class is a prestigious national event aimed at professional and serious food industry critics, chefs and professionals.

The Australian Barramundi Farmers Association supplied fresh farmed barramundi from cris Phillips at Barramundi Waters and Linda and Marty Phillips at Pejo. 

The preparation was done by Dominique Rizzo from Mondo Organics, a leading Brisbane restaurant. She served small portions of barramundi on a water cress cream dressed with gremolata, and then on sweet potato puree with red current and orange jus.

Graham Dalton represented the industry and spoke about why they should be using fresh farmed Australian barramundi as a gourmet menu item.

The ABFA involvement was organised by Qld Department of Primary Industries and this was an excellent example of government and industry working together for long term development.
